Beyond the '70s: The Jello Cake That Still Shows Up

Lemon Jello Cake That Still Shows Up Serves 12–15 | Prep time: 20 minutes | Bake time: 28 minutes | Chill time: 4 hours

Think Jello Cake was only for the 1970s? Think again! Decades later, I'm still making it, and my kids can't stop eating it. Every bite takes me back to the best memories: family gatherings, deep connection, and, of course, food.

This cake connects three worlds in my life: family potlucks where it disappeared within minutes, my sister-in-law's kitchen where it's her signature dessert specialty, and the auction in Quincy where Mom served Jello Cake from the concession stand on Tuesdays.

Boki's Kitchen Jello Cake

I worked that auction stand from seventh grade through high school graduation. Most Tuesday nights I was there, learning what it means to serve a community and how a simple dessert can bring people together. Lemon Jello Cake wasn't just sweet—it was a lesson in showing up and passing the work from one generation to the next.

Now I bake that same cake for my own family. Every slice carries all those memories: the auction, the potlucks, my sister-in-law's reputation for cake perfection, and the joy of watching my kids ask for seconds.

And you can make it too!

The Recipe

For the Cake:

  • 15.25 oz box lemon cake mix (white cake works as a substitute)

  • Ingredients listed on the box: eggs, oil, and water

  • 3 oz box lemon gelatin (Jell-O)

  • 1 cup hot water

  • 1 cup cold water

For the Topping:

  • 2–3 cups whipped topping (Cool Whip or homemade)

  • Lemon slices or zest, for garnish (optional)

Instructions:

  1. Bake the cake according to the box directions. Remove from the oven and let cool for about 5 minutes.

  2. Poke holes all over the cake with a fork.

  3. In a bowl, whisk together the Jell-O and hot water until fully dissolved. Whisk in the cold water, then pour evenly over the warm cake.

  4. Refrigerate for 2–3 hours until set.

  5. Spread whipped topping over the chilled cake.

  6. Return to the refrigerator for 2 more hours to chill completely.

  7. Top with lemon slices or zest if desired. Serve cold.
