When the girls were little, mornings were wild
(…okay, they still are most days). Our situation wasn't perfect, but we always made the most of it. Being Addy and Bella's stepmom has been one of the biggest blessings in my entire life. They’re two of the sweetest humans on Earth, even with having to split time between parents. Co-parenting didn't come naturally to me. Yes, I put the kids first many times, but if it weren't for my closest girlfriends to share frustrations with and use their shoulders to cry on, I wouldn't have made it to the other side (where I'd like to think I now reside).
While the girls were in elementary school, the schedule was tight. Both their Mom and Dad started work at 6 AM, yet the girls didn't need to be at school until 8:25 AM. To bridge that gap, I adjusted my schedule at QMG for a while to handle the drop-offs. By 5:15 or 5:30 AM, the girls were tucked into their beds to catch a few more zzz’s at our house after their Mom dropped them off that morning.
For me, these hectic mornings were the perfect opportunity to do what I do best: fill their tummies with something they would enjoy eating. Little ones are the most finicky eaters, I’ve witnessed! Finding a breakfast that was fast, nutritious, and edible was a daily challenge.
Enter: French Toast Sticks!
These were (and still are) my savior. These sticks took almost no time because I prepped them ahead and kept them in the freezer. From frozen straight to the toaster oven or toaster, paired with a sweet dip or topping, and suddenly, we were ready for the day. No fuss, no mess, just fuel for the day ahead.

Ingredients to Gather
6–8 leftover buns (hot dog or hamburger buns work great!)
1 cup milk
2 large eggs
2 teaspoons sugar
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional, but recommended)
Optional crunch: ½ cup cornmeal or crushed cornflakes
Let's Make It!
Prep: Preheat your oven to 375°F (190°C). Line 1–2 baking sheets with parchment paper.
Slice: Separate the buns by slicing them horizontally into two halves. If using hot dog buns, you can slice them lengthwise into thirds or quarters to create "sticks."
Mix: Crack the eggs into a bowl. Add the milk, sugar, vanilla, and cinnamon. Whisk thoroughly until combined.
Dip: Dip each bun piece into the egg mixture, ensuring it's coated but not soaking wet (you don't want it falling apart).
Add Crunch (Optional): For an extra crunch, press the wet side of the bun into the cornmeal or crushed cornflakes.
Arrange: Place the dipped buns onto your lined baking sheets.
Bake: Bake for 10 minutes. Carefully remove the pan from the oven and flip each bun.
Finish: Bake for an additional 10 minutes, or until golden brown.

Let them cool completely, then freeze them in a single layer on a baking sheet. Once frozen, transfer them to a freezer-safe bag. To reheat, pop them directly into a toaster or toaster oven from frozen until warm and crispy.
