Best Unstuffed Pepper Casserole: One-Dish Comfort Food

Stuffed peppers are a favorite comfort food. Boki’s Kitchen has already developed our classic stuffed pepper soup recipe, and now we transform the stuffed pepper into a tasty casserole to enjoy quickly and easily at home, un-stuffed!

To stretch this recipe even further, increase the amount of cooked rice to 2 1/2 cups. For the cheese, I used Velveeta and cut thin slices for the top and mixed approximately ½ cup into the mix. (I don’t recommend using shredded cheddar cheese for this recipe because American cheese melts so much better.) Brown the meat ahead of time. Be sure to season the meat while cooking with 1 tbsp salt, ½ tbsp pepper for the best flavor.

Making the rice and browning the meat ahead of time sets the bar high for a successful meal! When those ingredients are ready, the most work you’ll have to do will be throwing it together in a dish.

Best unstuffed pepper casserole: minimum cleanup— maximum flavor!

Ingredients to Gather

Cooked Rice, 2 cups

Green Peppers diced into approx 1 in squares, 3-4

Diced Tomatoes, 1 - 14.5 oz can with juice

Beef Seasoning/Bouillon with 1 cup of water, mixed (or beef broth)

Onion (sweet or yellow) diced, 1/2 cup (about 1/2 an onion)

Ground Beef (or ground pork, or mixture of both) - 1 pound browned and seasoned

American Cheese (Velveeta or Singles) - 1 cup (about 12 slices)

Garlic (jarred minced, fresh minced, or granulated) - ½ tbs

Chili Powder - 1/2 tbs

Paprika - ½ tbs

Let’s Make It!

Brown meat and cook rice ahead of time if needed.

Add beef bouillon with water (or beef broth) to the browned meat. Add diced tomatoes, chili powder, and paprika. Bring to a boil. Turn heat down to medium and let cook for 5-10 minutes and add ½ cup (or 6 slices) of american cheese. Cook and stir until the cheese is melted. Taste for seasoning (salt, pepper, garlic).

Layer cooked rice in a greased casserole dish.

Spread meat, tomato, and pepper mixture over the rice and mix gently to combine. Top with remaining american cheese.

Stick in a warm oven (175-200 degrees F) for at least 15 minutes (or hold up to an hour) to melt cheese and let flavors meld.
