Taco Stuffed Baked Potatoes

When taco night meets baked potato bar, the whole family is hungry! With Taco Stuffed Baked Potatoes, an easy and enjoyable dinner is within your reach! Although this is a great one dish meal, serving it with a shredded iceberg lettuce salad with a chipotle ranch dressing or Mexican corn salad takes it to the next level! Toppings can be tailored to each person, so adjust the following as needed for your family.

Ingredients to Gather

  • 4-5 Potatoes (Russets or Yukon Golds)

  • 1 lb ground beef

  • Taco Seasoning Packet, or Homemade Taco Seasoning

  • Shredded Cheese or Queso

  • Lettuce - 1/2 head

  • Tomato - 1-2, diced

  • Sour Cream - 1/2 cup

  • Salsa - 1/2 cup

  • Taco Sauce - as desired

  • Optional meat add-ins include kidney beans (dark or light), black beans, or corn

  • Optional toppings include black olives, onions, jalapenos, guacamole, cilantro

Let’s Make It!

Prepare the Taters

  1. Prepare the taters by washing and poking holes (carefully with a fork or knife) in each side of each potato.

  2. Wrap in foil if desired to bake in 350 degree F oven for 60-90 minutes until squeezes tender. If microwave is preferred, you may microwave unwrapped potatoes in high for 8-12 minutes, flipping halfway through (adding or subtracting time as necessary)

  3. Cut open your baked potato and give it a small squeeze. Fluff the inside of the potato.

Assemble the Potatoes

  1. Add 2oz of meat mixture to each potato (or have the family make their own, so each person can follow these steps!)

  2. Add Cheese of choice to each potato

  3. Add preferred toppings

  4. Enjoy!
